A rosehip granita and redcurrant espuma will cleanse the palate before your choice of main course. Choose from Norwegian salmon mi- cuit, tomato and ginger broth, warm potato salad, and dill crème fraîche; chicken ballotine, miso corn velouté, pomegranate, corn purée, coriander, and prawn and scallion croquette; or lamb loin, lamb sweetbreads, courgette latke, dukkha, minted pea velouté and lamb jus.
