Culinary Brilliance by Chef Katlego Mlambo

Glenfiddich collaborated with Chef Katlego Mlambo, whose maverick spirit and French fusion cuisine set the stage for an extraordinary culinary journey. “Creating a menu for the Grand Château experience involved infusing the essence of French finesse with the Scottish roots of Glenfiddich,” said Chef Mlambo. The menu expertly blended sophistication with playful twists, with each dish enhancing the intricate notes of the whisky, capturing its richness and legacy.

Immersive Design and Artistic Influence

The experience began as guests walked through archways inspired by Glenfiddich’s signature "paper play" animations, reflecting the whimsical elegance of the Grand Château. The interior design, led by artistic mastermind André Saraiva, seamlessly fused cultural elements: luxuriously draped walls, French details, and subtle homages to Glenfiddich’s heritage set the tone for refined opulence. Staff uniforms, styled after the edgy sophistication of Vivienne Westwood, added a daring yet elegant flair, perfectly complementing the evening’s luxurious ambiance.

Lifa Bakana, Brand Manager at Edward Snell & Co., passionately described the vision behind the event: “We wanted guests to feel the legacy, to taste it, and to lose themselves in an experience as rare as the whisky itself.” Bakana’s words resonated throughout the evening, as the interplay of art, design, and flavour encapsulated the spirit of Glenfiddich’s Grand Château.

A Five-Course Culinary Journey

Upon arrival, guests were treated to signature cocktails designed to accentuate the complex flavour profile of Glenfiddich whiskies. The immersive journey continued with a five-course meal, each course paired with a Glenfiddich pour and cocktail to elevate the dining experience.

Highlights included:

  • Duck a L’Orange Tartlets and an inventive ‘ode to the humble carrot.’
  • Citrus-cured Scottish salmon served with passion fruit beurre blanc, tarragon-pickled cucumber, and compressed papaya.
  • A rich main course of 21-hour confit lamb shoulder with boulangère potatoes, whisky soubise, truffle bordelaise, and a vibrant sauce verte.
  • The grand dessert: whisky-poached peaches, toasted pecan and oat streusel, white peach purée, smoked crème Diplomat, and vanilla pickled peaches, paired with a dram of the Glenfiddich Grand Château 31-Year-Old.

The Perfect Ending

Each night concluded on the terrace, where sweeping views of Johannesburg’s city lights created a magical setting. Guests enjoyed a final nightcap as a DJ played live music, blending elegance with celebration to end the experience on a high note.
