At the cornerstone of the plan is Nuts About Cooking, a vegan-friendly, additive-free refined coconut oil and cooking spray. Packed with 60% Medium Chain Triglycerides (MCTs), known for their swift energy supply to the body and brain, the coconut oil has a neutral taste and can be used in cooking applications such as frying, baking or simply as an addition to a dip or smoothie.

Red Lentil Dip
1 cup cooked red lentils1 Tbsp Nuts About Cooking Coconut Oil1/3 onion, chopped1 tsp cumin1 Tbsp tahini1 clove garlic, chopped1/3 lemonSalt and pepper.
- In a pan, add the onion and fry for five minutes.
- Add the garlic and cumin and fry for another two minutes.
- Remove from the heat and place all the ingredients into a blender, season, and blend until smooth.
- Add a splash of water if necessary to loosen.
Green Quinoa Salad
2 cups cooked quinoa2 cups fresh coriander1 cup mint leaves1 cup fresh parsley½ lemon, squeezed1 clove garlic1 Tbsp tahini2 Tbsp Nuts About Cooking Coconut Oil2 Tbsp waterSalt and Pepper
- Place all the ingredients (except the quinoa) in a blender and blend until smooth.
- Fold through the quinoa, store in the fridge.
