Celebrate Halloween the South African Way With This Scary-Good Laager Rooibos Pumpkin Pie!

Celebrated on 31 October, Halloween centres around dressing up in fun and frightening outfits, trick-or-treating in the neighbourhood, and collecting sweets. This year, the team at Laager Rooibos is adding a local spin to the Halloween tradition with a Laager Rooibos Pumpkin Pie recipe and some fun pumpkin-related activities for the little ones.
“We want to bring a taste of South Africa into this year’s Halloween, and there’s nothing more South African than Rooibos!” says Candice Sessions, Laager Rooibos Marketing Manager. “Whether you’re participating in the Halloween festivities or just spending time with family, this delicious Laager Rooibos Pumpkin Pie is a must-try. We’ve also created some fun activities to keep the kids entertained.”
Laager Rooibos Pumpkin Pie Recipe
Ingredients:
- 1 sheet shortcrust pastry
- 250 g cream cheese, softened
- 410 g pumpkin puree
- ½ cup butter, melted and cooled
- 2 tsp vanilla essence
- 3 eggs
- 1 cup icing sugar
- 1 tsp cinnamon
- 1 tsp allspice
- 1 Laager Pure Rooibos teabag (cut open and remove leaves)
- ¼ tsp salt
- 2 cups heavy cream
Method:
- Preheat the oven to 190°C.
- In a mixing bowl, beat the softened cream cheese for 5 minutes until light and fluffy, scraping down the sides often.
- Add the pumpkin puree and mix for another 5 minutes.
- Add melted butter and vanilla essence, mixing for 1 minute.
- Add eggs one at a time, mixing well after each one.
- Add icing sugar, cinnamon, allspice, tea leaves, and salt.
- Place shortcrust pastry in a deep-dish pie pan and blind-bake for 10-12 minutes.
- Pour the pumpkin pie filling into the pie crust once out of the oven.
- Place the pie dish on a baking sheet and bake for 15 minutes.
- Reduce oven temperature to 175°C and bake for another 35-40 minutes, covering the pie with foil to prevent browning.
- Let the pie cool for 1 hour, then refrigerate for 4 hours.
- Top with freshly whipped cream before serving.

Hosting a Halloween dinner? Turn pumpkins into table centrepieces by cutting a hole at the top, placing a jar or glass inside, and filling it with wildflowers, grasses, or branches collected by the kids.
Tip: Don’t throw away the pumpkin seeds! Dry them out for arts and crafts or toast them for a delicious snack.
