Palazzo presents perfect wine and dinner pairings

The pairing of food and wine takes centre stage at The Palazzo (https://www.tsogosun.com/the-palazzo-hotel) at Montecasino for one elegant, exclusive event each month as a selection of fine wines from a leading wine estate are paired with a multi-course menu, presented by Tsogo Sun’s group sommelier, Miguel Chan, and The Palazzo’s executive chef, Gareth Jordaan.
Andrew Hosking, Tsogo Sun Hotels Operations Director, Gauteng Northern Central region, says the wine evenings bring together “the perfect combination of elements for which Tsogo Sun is renowned – excellent wines, world-class cuisine, and in-depth knowledge and understanding of both – for a very special evening for wine lovers, in the exquisite setting of The Palazzo’s Rosa.”
On Thursday 30 May, the Palazzo Wine Evening Dinner will feature Warwick Wine Estate (https://www.tsogosun.com/the-palazzo-hotel/whatson/wine/warwick-wine-pairing-evening), which is based in Stellenbosch on the slopes of Simonsberg. The farm is renowned for its range of wines, focusing on premium Bordeaux varieties. A variety of their wines will be paired with a five course dinner, and Cellarmaster JD Pretorius will join Miguel Chan in the presentation. The dinner will end with three exclusive Grand Cru coffees – Lungo from Guatemala, Espresso from Brazil and Ristretto from India.
Award-winning Miguel Chan celebrates 10 years with Tsogo Sun in July this year, where he has ensured the exceptionally high wine standards for Tsogo Sun hotels, working with food & beverage teams to create a unique and appealing dining experience, and developing a team of wine stewards to become future sommeliers.

Who is Miguel Chan?
Born and educated in Mauritius, Miguel Chan came to South Africa in 2003 when he worked as a wine bar manager in Cape Town. He rapidly built a reputation for excellence in the wine industry, and in 2007, he says one of his greatest achievements was to represent South Africa at the inaugural Chaines des Rotisseurs International Young Sommeliers World Final in Frankfurt in Germany. In 2008 Chan achieved certification from the Court of Master Sommeliers UK as a Sommelier, and in the same year, he won Diners Club International Wine List Award for creating South Africa's overall National Best Wine list, which he repeated in 2011, and was the first time in the history of the award that it was given to a hotel restaurant in Johannesburg.
In 2015, Chan won the prestigious 2015 Vinexpo Challenge in Bordeaux in France, which was ‘A Blind Tasting with Paolo Basso’, a World’s Best Sommelier (a lifetime title held by only 15 individuals in the world since 1969). The challenge was against 120 wine professionals from around the world and involved correctly identifying 10 great classic wines from around the world, selected by Basso.
Also in 2015, Chan was inducted into membership of the South African Brandy Guild and was presented with the Brandy Guild Medal of Honour. Membership of the guild is by nomination only and acknowledges the efforts of respected individuals who raise awareness of SA brandy’s global champion status.
